Turkey and Veggie Meatloaf

1 tbsp extra virgin olive oil

2 lbs ground turkey

1 carrot, diced

1/2 onion, diced

1/2 cup diced mushrooms

2 cloves garlic, peeled and minced

2 cups spinach, chopped

1 tsp sea salt

1/2 tsp ground pepper

3 eggs

1/2 cup almond flour

1 cup tomato sauce (divided)


1. Heat the over to 400 degrees

2. Heat the oil in a pan over med. heat and add carrot, onion, garlic, spinach, and mushrooms 

3. In a large bowl, add the veggie mix, turkey, eggs, salt, pepper, almond flour, and 1/2 cup of tomato sauce. Place mixture into a loaf pan or on a baking sheet.

4. Cook for 1 hour (until thermometer in center is 165 degrees). Take the meatloaf out of the over and spread on the other 1/2 cup of tomato sauce.
